Dessert has to be. And what’s better than beating two desserts with one stone – or better, a dessert spoon? Whatever it is, making ice cream cake, e.g. with an ice cream cake, or cake to ice, as with this strawberry cheesecake ice cream. An American classic. Thanks to cream cheese and cream, no egg is needed to be creamy. And thanks strawberry puree it gets the necessary fruit kick.

Strawberry Cheesecake Ice Cream Without Egg

For the ice
  1. 250 g cream cheese
  2. 80 ml of cream
  3. 400 ml sweetened condensed milk
  4. 1 organic lemon
  5. 6 wholegrain biscuits (eg hobbits)
  6. 100 g strawberries
  7. 1 teaspoon of sugar
Special accessories

  1. Stir cream cheese with cream and condensed milk. Rub the lemon peel and stir. Pour into the ice maker and let it freeze for 1 hour.
  2. Puree strawberries with sugar. Break cookies roughly. Lift biscuits under the ice. Strain strawberry puree and mix roughly. Freeze until served or enjoy immediately.
  1. Use fresh strawberries when they are in season. Otherwise you prefer to take frozen strawberries and let them thaw before blending, so you get the best taste.
